The ￠rst is a compound with a molecular mass of 9 kDa, which displays antimicrobial activity against a wide range of B.cereus strains without a!ecting growth of other tested Gram-positive bacteria. Cerein 7 inhibits a wide range of Gram-positive bacteria, has a molecular mass of 3.94 kDa and was classi￠ed as a class II bacteriocin [11]. Furtherexamples are thuricin [12], tochicin [13] and thuricin 7 [14]. Thuricin, isolated from B.thuring iensis serovar HD-2, exhibits inhibitory activity against other B.thuring iensis strains and certain Gram-positives, has a molecular mass of s950 kDa, while its production has been linked to the presence of a plasmid [12]. B.thuring iensis subsp. tochigiensis HD868 produces tochicin, which appears to be exclusively active against other B.thuring iensis strains. Thuricin 7 is active against B.cereus and B.thuring iensis strains, but also displays antimicrobial activity against Bacillus subtilis, Listeria monocytogenes and Streptococcus pyogenes [14]. More recently, a BLIS produced by the soil isolate B.cereus strain 8A was characterised, and found to exhibit a broad range of inhibitory activity, retaining activity at high temperature and within a relatively wide pH range [15].
